Because the hyphae are thicker and longer, the colonies formed are loose, fluffy, cotton-like or spider-web-like, and are generally several to dozens of times larger than bacterial colonies. The colonies are often light-colored or white at first. When spores of various colors grow on the colonies, due to the different shapes, structures and pigments of the spores, different structures and colors visible to the naked eye often appear on the surface of the colonies, such as yellow, green, cyan, black, orange, blue and other colors.

Some molds produce pigments that can diffuse into the culture medium, causing the front and back sides of the culture medium to show different colors. Therefore, colony characteristics are also one of the main bases for identifying molds.

Molds have various ways of reproduction, mainly by forming asexual and sexual spores. Generally, when mold hyphae grow to a certain stage, they first reproduce asexually. In the later stage, sexual reproduction structures are produced on the same mycelium to form sexual spores. Molds that are closely related to human life and food production include Rhizopus, Mucor, and Pneumococcus of the Phycocetiformes; Monascus of the Ascomycetes; Aspergillus and Penicillium of the Deuteromycetes.

Mucor is widely used in the food industry. For example, Mucor can produce monohydroxybutanone and lipase. Mucor rouxii is not only used in the brewing industry, but can also be used to make fermented tofu, while Mucor racemosus is used to make fermented black beans. Some Mucor species can also be used to convert steroidal compounds to produce oxalic acid, lactic acid, succinic acid and glycerol.
