How to make gluten:

2. Knead the dough, cover and let it stand for half an hour. Shape the dough and knead it slightly.

3. Add water to the basin and knead the dough repeatedly with your hands.

4. When the flour water becomes very thick, scoop out the dough, pour the flour water into a larger bowl, add water to the bowl again, and knead the dough.

5. Repeat this process six times. Put all the flour and water into the same basin and let it sit to allow it to settle and separate into layers.

6. Place the washed gluten separately.

7. Take a small piece of gluten, tear it into thin long strips, and wrap it around your fingers to form a ball.

8. Put the gluten dough in a steamer and steam it over high heat for eight minutes. It can also be boiled in water.

9. After the flour water has been left standing for two or three hours, carefully pour out the clear water that has settled on the upper layer, leaving only the thick flour water on the bottom layer. Add dry yeast.

10. Add the thick dough water with dry yeast, cover and ferment for at least one night. I fermented it for one night plus four hours, until the dough water becomes slightly sour.

11. Stir the noodles and water with a spoon, scoop into a small bowl, place in a steamer and steam over high heat until it becomes solid. If you put half a bowl of noodle water into a small bowl like mine, it will only take about four or five minutes to steam.

12. Apply a layer of oil on the rolling pin and chopping board.

13. After the dough has been steamed and solidified, take it out and let it cool slightly until it is ready to use. Use a spoon to cut the edge of the bowl and pour it out.

14. Use an oiled rolling pin to quickly roll the dough into a thin sheet of dough that can fit into the steamer. My scoop is not very well formed. It's my first time using it. Please forgive me!

15. Put the rolled dough into the steamer and apply a thin layer of oil on it. Repeat this process and put in the next rolled dough. Steam over high heat for seven or eight minutes until everything is rolled. The dough is ready.

16. Start preparing the side dishes. Blanch the mung bean sprouts in boiling water for two minutes. Remove from cold water.

17. Start serving. Place the dried mung bean sprouts at the bottom.

18. Place the torn dough sheets on top.

19. Take another small bowl to prepare the sauce. Pour in white vinegar first, add more vinegar.

20. Add a spoonful of salt.

21. Add a little MSG.

22. Add a spoonful of soy sauce.

23. Add minced garlic.

24. Add a few drops of sesame oil.

25. Pour homemade chili oil on the dough on the plate.

26. Pour in the prepared sauce.

27. Add the shredded gluten
