1. Crush the olives, but not too much, as this will make them difficult to separate later.

2. Add water according to the comparison example. The specific proportion depends on the taste you want.

3. Add sugar at a ratio of 10:3 after adding water. Half of the sugar can be added first, and the other half can be added after fermentation for 2 to 3 days. You can also add lemon juice to adjust the acidity if necessary.

4. Add brewer's yeast. You can use wine brewer's yeast. The fermentation temperature is controlled between 20 and 25 degrees. The fermentation time takes about 10 to 20 days. It can be separated when there are no bubbles.

5. Separate the wine and store it in full barrels. Let the gas out every once in a while during the first period of time. Otherwise there is a risk of the bottle exploding... At this time a one-way water valve is usually used to allow air to only flow out but not in. But without a one-way water valve, I have to release the air every once in a while.

6. After the gas has completely disappeared, pour the wine into a barrel, remove the sludge at the bottom, and start aging.

7. You can drink new wine, but it will make you drunk easily. It is recommended to age it for more than 6 months before drinking.
