Method 1

Ingredients: 5000g of premium glutinous rice, 50g of wine yeast

Preparation method:

1. Wash 5000 grams of glutinous rice with clean water, soak it for 1 hour, and then pour it into a colander (a bamboo container used for washing rice and vegetables in the south, similar to the winnowing basket in the north) to drain.

2. Place gauze in the steamer and pour the drained glutinous rice on it. Steam it over high heat for 1 hour, then pour it into a basin. Use an electric fan to lower the temperature of the rice to 20℃-40℃ (the temperature will vary depending on the type of wine yeast, the origin of the glutinous rice, and even the latitude). Then pour an appropriate amount of cold boiled water into the basin and mix well with your hands. Grind the koji into powder and put it into a bowl, then mix well again.

3. Pour the mixed glutinous rice into a jar, make a small well in the middle with your hands, then add the remaining koji powder and a little cold boiled water and sprinkle it on the surface of the glutinous rice. Then cover the jar tightly with a wooden lid, wrap it with cotton wool, and put it in a straw nest. It will become fermented glutinous rice in 3 days.
