**Put the vegetables in the pan after the oil starts to smoke. **Many people do not put the food in the pan until there is no smoke, thinking that this will make the food fragrant. However, they do not know that this is a big health taboo. The edible vegetable oil sold in the market today may have reached a temperature of more than 200 degrees Celsius when it is heated in a pan until it starts to smoke.

At this time, not only may the oil quality deteriorate due to high temperature, but also the nutrients such as vitamin C, E and essential amino acids in the dishes will be destroyed. The resulting oil smoke also contains a large amount of nitrogen oxides, benzopyrene, etc., which have a strong carcinogenic effect on the human body.

**After cooking, do not clean the pot and continue cooking. **Some people do not clean the pot if the pot is not too dirty in order to save trouble. In fact, these seemingly clean pots will have grease and food residues on the surface. If they are heated at high temperature again, carcinogens such as benzopyrene are likely to be produced. In addition, the remaining food will be burnt, which may cause cancer.

**Using leftover oil for cooking. **Oil that has been repeatedly used at high temperatures can easily produce carcinogens, such as benzopyrene and aldehydes. When this oil is used for high-temperature cooking, the carcinogens will increase dramatically. Moreover, the used oil has been oxidized, and if it is not stored properly, it is more likely to deteriorate.

**Don't turn on the range hood when cooking, or turn it off immediately after cooking. **Cooking oil will produce fumes at high temperatures, which contain many irritating and harmful substances. Not turning on the range hood will be very harmful to the body. Some people are used to turning off the range hood immediately after cooking.

In fact, it takes a certain amount of time for the range hood to remove the exhaust gas, and some exhaust gas will still remain in the kitchen after cooking. For people with respiratory diseases, it will aggravate the condition and induce asthma, inflammation, etc. In addition, among middle-aged and elderly women who are exposed to high-temperature kitchen fumes for a long time, the risk of lung cancer increases by about 2 to 3 times, which is no less harmful than smoking.

What kind of cooking method is healthier and safer?

**Use less oil and fry less. **Chinese people’s cooking method is “no oil, no fun, no stir-fry, no dish”. However, it is recommended that you use more healthy cooking methods: reduce the amount of oil as much as possible, control it to 25-30 grams per day; reduce the cooking temperature and cooking time as much as possible; use less high-temperature stir-frying and frying; try not to reuse cooking oil.

**Add vinegar when cooking. **Adding vinegar to cooking has two advantages: one is to protect the vitamin C in the food; the other is to promote the body's absorption of vitamin C.

**Pay attention to ventilation. **Kitchen fumes will adhere to kitchen utensils, clothes, and skin, and drift into the living room and bedroom. Even if people are not cooking, they will inhale the fumes. It is best to close the bedroom door and open the kitchen window when cooking. Wash your face and hands after cooking, and clean the kitchen more often.
