Most boiled eggs cannot be evenly cooked. Undercooked eggs contain antitrypsin, which will hinder the body's digestion and absorption of protein. If too much unabsorbed protein is deposited in the body, it is easy to be converted into harmful substances such as amines and hydrogen sulfide under the action of E. coli, which will increase the burden on the liver.

Eggs are foods that are more easily contaminated by bacteria, including salmonella, E. coli and other pathogenic bacteria. Studies have found that in order to fully kill these bacteria, eggs need to be heated to above 71°C. If the boiling water is not evenly brewed for a short time, these bacteria cannot be killed, which may lead to acute gastroenteritis, vomiting, diarrhea and other symptoms.
