Preparation method of red date walnut cake

Ingredients:

Red dates (net weight without pits): 200g, walnut kernels: 160g, black sesame: 250g, maltose: 330g, wolfberry: 40g, water: 55g;

Production steps:

1. Cut the red dates into strips and break the walnut kernels into 1/8 size.

2. Fry the black sesame seeds on low heat until cooked and fragrant, or use cooked black sesame seeds.

3. Bake the walnut kernels at 150 degrees for 15-20 minutes until cooked through, turn them over in the middle, and bake them inside out.

4. Prepare all the dry ingredients (red dates, walnut kernels, black sesame seeds, wolfberries), put them in a bowl and set aside.

4. Put maltose and water in a flat non-stick pan, simmer on low heat until the sugar melts and becomes more concentrated, and the bubbles gradually turn from big to small. Then use a spatula to pick up the syrup, and the syrup can hang on the spatula. Drop a small amount of syrup into the cold water prepared in advance, and it will immediately solidify. Turn off the heat and stop heating when the sugar is crisp and hard.

5. Pour in the dry ingredients immediately and mix well with a wooden spatula so that the ingredients are evenly coated with syrup.

6. Move the dough into a pre-oiled or non-stick mold, use a scraper, rolling pin, or oil paper to assist in shaping, and keep pressing hard to shape it.

7. When it cools down to a slightly warm temperature, cut into the desired size and shape. Seal the bag and store. I personally prefer to cut it into thin slices, which are easier to handle and chew.
