Why is the steamed cake not soft and fragrant? Tips and tricks for making steamed cake

We all know that steamed cake is a popular snack. It tastes sweet and delicious, and is soft and sticky. It is loved by children and the elderly. Many people eat steamed cakes frequently. There are certain rules for making steamed cakes. So how to make steamed cakes more delicious? Let's take a closer look!

How to steam the cake

After the traditional steamed cake is steamed, it smells sweet and fragrant, and its taste is glutinous but not sticky, delicate and very delicious. After some changes, modern steamed cakes are easier to make, and the taste is also very fluffy and delicious. However, many friends think that the steamed cakes they make are too coarse, not delicate enough, and not fragrant. What causes this?

1. We need to consider the fermentation of the batter

Is the fermentation time sufficient? It is recommended to ferment for about 3-4 hours at room temperature. If the fermentation time is too long, the finished product will taste sour and not fragrant and soft.

2. After steaming, be sure to simmer for a while

If this step is not done, the steamed cake will shrink due to the cold, and the shape of the finished product will collapse, which is not beautiful.

Steamed cake tips

1. When making the cake, the fermentation time and degree of fermentation are the most critical. It is enough to ferment it to twice its size. If it is over-fermented, the steamed cake will collapse.

2. When steaming, brush a layer of oil in the mold so that the steamed cake will not stick to the mold and cannot be removed. If you have a cake mold at home, it would be great, it will not stick together and it will be easier to take out.

3. You can use ordinary medium-gluten flour. You can mix it with some cornmeal or millet flour to make the dish more fragrant.

4. The amount of sugar can be reduced, eggs can be omitted, and milk can be directly replaced with water.

5. It is better to have a thicker batter, as water will seep out during the fermentation process. If it is too thin, it will be difficult to shape after steaming and will form a puddle.

6. It is relatively simple to make it with an electric rice cooker. The kneading and fermentation are both done in the rice cooker. Put the fermented dough directly in the inner pot of the rice cooker and click on the cake option.

7. Stir carefully until there is no dry powder or granules.

8. The fermented dough can be turned over and stirred appropriately to remove larger bubbles, so that the honeycomb holes of the steamed cake will be more uniform.

9. After the steamed cake is done, do not rush to open the lid. Turn off the heat first and wait until the temperature drops before opening the lid to prevent the cake from collapsing and shrinking due to cold.

10. You can omit the red dates and replace them with wolfberries, raisins, etc. If you want it to look good, you can arrange it into a nice shape.

How to make steamed cake at home

1. First, wash the prepared red dates, remove the pits and cut into small pieces of appropriate size for later use. (If you like whole red dates, you can remove the pits and put them in whole pieces, and you can also add some sesame seeds if you like)

2. Then dissolve the brown sugar with an appropriate amount of boiling water. After it cools naturally into warm brown sugar water, add the yeast, stir evenly, and set aside for a while.

3. Then add the low-gluten flour to the glutinous rice flour, mix evenly, pour in the brown sugar water, stir until there are no obvious particles, let it ferment naturally, and add the chopped red dates after fermentation.

4. Finally, boil water in a pot, put the ingredients into the pot after the water boils, steam over high heat for about 20 minutes, then simmer for a while before taking out.
