4. Fresh eggs, rock sugar or brown sugar.

Specific steps:

1. Prepare the ingredients: a large clay pot, 2 pounds of pig's trotters, 1 pound of local turmeric, 1000 ml of sweet vinegar, 10 eggs, and about 200 grams of sugar.

2. Scrape the skin of the turmeric, rinse it, crush it or slice it, and stir-fry it in a frying pan without oil until the water content is relatively low and it is slightly dry.

3. Wash the pig's trotters, put them in cold water together with the eggs, boil them for 15 minutes, pick them up and rinse them, drain the water from the pig's trotters (you can also stir-fry them dry like you did with ginger), and peel the eggs.

4. First put the turmeric into the pot, then put the pig's trotters, eggs, and finally pour the sweet vinegar into the pot. All the ingredients can only be put into the pot to 80% full, because the sweet vinegar is thick and will spill out if you are not careful.

5. Bring to a boil over high heat, then simmer for 1 hour on the lowest heat. Test the taste. If you like it sweeter, add some sugar. If you are not eating it right away, you should scoop out the pig's trotters, divide them into small portions and put them in the refrigerator. Next time you eat them, put them in a clay pot and heat them up.

Precautions for pregnant women to eat pig's feet and ginger

The amount of ginger in the pig's feet is relatively large. If you can't finish it, just boil it and let it cool. Boil it before eating each time, and stir it when boiling to prevent it from sticking to the bottom. The longer the soaking time, the better the taste of the eggs and ginger.

Only sweet vinegar can be added to the pork trotter and ginger, and no water can be added! If water is added, it will easily go bad. Vinegar itself has a preservative effect. The pork trotter and ginger will not go bad after being cooked. Boil it every other day in summer and every three days in winter. When the ingredients are finished, you can add them back and cook again without changing the sweet vinegar.
