Harm of nitrite:

Infant methemoglobinemia (also known as methemoglobinemia): Excessive intake of nitrates can induce infant methemoglobinemia. Since methemoglobin cannot combine with oxygen, the person is hypoxic at this time. How to store dried radish without spoiling

The dried radish is cylindrical, 4 to 5 cm in diameter, weighing about 150 grams, with a thick white skin and low water content. The processing method also uses the wind dehydration method, cut into strips with a knife, each with a side skin, and then spread out to dry, turn over several times a day, and cover at night to prevent fog and rain. After drying for 2 to 3 days, it feels soft and can be pickled. Put the radish strips in a container, add salt and mix well, and rub vigorously until the salt melts. Put them into the jar in batches, tamp them down layer by layer, take them out of the jar after two days, spread them out evenly and turn them frequently.
