How to adjust the sesame paste you bought

Sesame paste is usually very thick when you buy it. The sesame paste can be smooth and delicious by following the following steps.

1. Put selected amount of sesame paste into a small bowl and add a small amount of sesame oil.

2. Add hot or warm water in small amounts several times and stir until it becomes a paste. Add water several times while stirring, and do not add all at once. Do not use cold water, as it will make the sesame paste difficult to dissolve and the aroma will be reduced by half.

3. After stirring until there are no particles and it is slightly thick, add salt, sugar, soy sauce, oyster sauce, chives, coriander and other seasonings you like. A bowl of fragrant sesame paste is ready. It is great for mixing with cold dishes or making hot pot ingredients.

How to make sesame paste

1. First, rinse the sesame seeds with clean water to remove dust, sand and the like, then drain the water for later use;

2. Heat the wok over medium heat, add the sesame seeds and stir-fry briefly for a few times. Once the water vapor is obviously evaporated, immediately turn to low heat and stir-fry slowly;

3. Stir-fry the sesame seeds until they are cooked through and can be crushed with your fingers. Take them out and spread them out to cool for later use.

4. Put the sesame seeds into the grinder until they are about 2 to 3 cm above the grinding blade. Grind at high speed for 30 seconds, then add the remaining sesame seeds. At this time, you can add a little sesame oil and sugar.

5. The infiltration of oil makes it easier to grind and less likely to become hard. Sugar can make sesame paste sweeter. After grinding it thoroughly into the coarseness you want, you can pour it into a bottle for storage.
