So how do you kill a soft-shelled turtle?

How to kill turtle

Soft-shelled turtles are quite ferocious, so it is recommended that you buy them at the market and have someone help you kill them. Do not buy dead soft-shelled turtles, as they are not good to eat.

Method 1

Turn the turtle over, wait for its long neck to stretch out, grab it, and then cut the turtle's neck with a knife. When the turtle is killed, soak it in boiling water, open its belly and take out the internal organs, remove the fat from the turtle's body, clean it, and steam or chop it, then stir-fry it in a pan.

Method 2

One method is to turn the turtle over and cut a knife from the side to split it in two, usually leaving a layer of skin. When killing it, use one hand to cover the turtle with a rag to prevent it from biting people. Another method is to use a knife to cut a cross on the back of the turtle, and the turtle is killed.

Method 3

When its head sticks out and turns over, step on it with your foot and cut off its head immediately... When it has bled to death, put it in a basin and pour boiling water into it to remove the membrane on the turtle's abdomen, back and four legs. Then use scissors to cut along the soft edges of the four legs into two parts, upper and lower (some people cut in a cross shape on the lower back). Then clean the internal organs, put them in a plate of suitable size, put onion, ginger, salt and other seasonings, you can also put rock sugar, etc., put it in a pot and steam it over high heat for about half an hour before eating.

How to kill and deal with soft-shelled turtles

Quick knife method. Turn the turtle over, and it will instinctively stretch its head to go back. At this time, we just need to cut it quickly to drain the blood.

Teasing method. Soft-shelled turtles are naturally aggressive. You can use chopsticks to tease a soft-shelled turtle. It will bite the chopsticks directly and will not let go even if you lift it. At this time, you can just cut the soft-shelled turtle's long neck with a knife.

After bleeding, use pre-prepared hot water (80~100℃) to scald the turtle for 3 to 5 minutes, then cool it with cold water, and then scrape off the black skin of the turtle. The black skin and blood of the turtle must be removed, otherwise there will be a fishy smell, and the black skin itself is not clean.

After cleaning with scissors, cut along the tortoise shell meat skirt, and use a knife to cut a cross on the abdomen to remove the internal organs, especially the butter and gallbladder. The butter has a particularly fishy smell, and removing the gallbladder is to prevent poisoning. After cleaning, cut off the top of the four claws and the tail sheath, and remove the butter attached.

How to choose soft-shelled turtle

First of all, it must be alive. Dead turtles cannot be eaten because they will decompose into a large amount of toxic substances after death, which will cause food poisoning if eaten, even if they are refrigerated.

Secondly, buy turtles of moderate size and relatively fierce. Big ones will get old, and small ones will smell fishy. The fiercer and healthier they are, the longer they can be cultivated. Currently, there are wild and farmed turtles on the market. Wild ones are the most fierce, but very rare, and farmed ones are also accelerated.

It is recommended to buy female turtles with short tails, agile movements and medium body size.
