Is there "fake milk" in supermarkets? ! This indicator is the most important when choosing the right milk!

Faced with the dazzling array of milk types on the shelves, do you know how to choose? Milk can also be divided into "real" and "fake". How come?

These 3 types of milk on the market are real milk

1

Pure milk - Implementation standard GB25190

Pure milk is milk obtained by heating and sterilizing raw cow's milk (with or without adding reconstituted milk).

Pure milk requires protein content ≥2.9g/100g and fat content ≥3.1g/100g.

Such products include: (whole fat) pure milk, skimmed pure milk, and semi-skimmed pure milk.

2

Pasteurized milk - Implementation standard GB19645

Milk that is made only from raw cow's milk and goes through processes such as pasteurization .

The standard for pasteurized milk also requires a protein content of ≥2.9g/100g and a fat content of ≥3.1g/100g.

Such products include: (whole fat) fresh milk, skimmed fresh milk, semi-skimmed fresh milk, etc.

Compared with pure milk, pasteurized milk is sterilized at a low temperature of about 72-85°C, has a short shelf life , and requires low-temperature refrigeration. However, pasteurized milk retains more nutrients and flavor substances and tastes better .

3

Modulated milk——Implementation standard GB25191

Formulated milk refers to a liquid product that is made from no less than 80% raw milk and/or reconstituted milk as the main raw materials, with other raw materials or food additives or nutritional fortifiers added, and using appropriate sterilization or disinfection processes.

Formulated milk requires protein content ≥ 2.3g/100g and fat content ≥ 2.5g/100g.

In addition to raw milk or reconstituted milk, the product also contains other ingredients such as grains, fruit grains, minerals, white sugar, vitamins, edible flavors, etc. to enhance nutrition or improve the taste to meet the needs of different groups of people.

Such products include: breakfast milk, wheat-flavored milk, children's milk, high-calcium milk, Shuhua milk, cereal milk, fruit milk, student milk, etc.

As long as other additives are added to milk, it is considered as a modified milk. From a nutritional point of view, when buying, you can choose those with fewer added ingredients, such as modified milk with added vitamin D, soy milk with added lactase, and breakfast milk, student milk, fruit milk, banana milk, etc. with less added flavors, white sugar, fruit juice, etc.

Milk-containing beverages are not milk

Milk-containing beverages refer to beverage products that are made from milk or dairy products, with water and appropriate amounts of auxiliary materials added and prepared or fermented. Milk-containing beverages are beverages rather than milk , and their implementation standard is GB/T21732.

There are three types of milk-containing beverages: prepared milk-containing beverages, fermented milk-containing beverages, and lactic acid bacteria beverages. Prepared milk-containing beverages and fermented milk-containing beverages are required to have a protein content ≥ 1 g/100 g , while that of lactic acid bacteria beverages is ≥ 0.7 g/100 g .

In terms of identification, milk-containing beverages have a lower milk content, and the first ingredient on the ingredient list is usually "water" , followed by ingredients such as sugar, raw milk, milk powder, flavors, and probiotics.

You can also look at the protein content when distinguishing.

The protein content of pure milk and pasteurized milk is required to be above 2.9g/100g, that of modified milk is above 2.3g/100g, and that of milk-containing beverages is above 1.0g/100g. The nutrition of milk-containing beverages is much lower than that of milk.

Is reconstituted milk fake milk?

Reconstituted milk is not fake milk.

"Reconstituted milk" is also called "reconstituted milk". It means that milk is concentrated and dried into concentrated milk (condensed milk) or milk powder, and then an appropriate amount of water is added to make an emulsion with a water-to-solid ratio equivalent to that of the original milk .

Generally speaking, it is inexpensive to use milk powder and water to reconstitute liquid milk, but in terms of nutritional content , it is not as good as pasteurized milk and room temperature milk made from fresh milk . Now the state stipulates that the packaging of reconstituted milk products should be marked as "reconstituted milk" or "water, milk powder" should be indicated in the ingredient list.

In short, if you want to buy milk, I recommend that you look for the words "pure milk" or "fresh milk" on the package. The simpler the ingredient list, the better.
