Because they are rich in protein and amino acids, they will produce toxins if left for a period of time, and they are easily contaminated by bacteria and cause poisoning.

How to deal with scallop edges

The edges of raw scallops are difficult to clean, so we first boil the edges of the scallops without the scallop meat in hot water so that the gonads, digestive glands and gill hairs are cooked and become crispy. Use a colander to scoop them out and let cool (you can also rinse them with ice water immediately), then put them into a net bag (with a hole of about 1.5 cm) and rub them back and forth in the water. If you are processing it at home, rub it with your hands until the gonads, digestive glands and gill hairs are almost rubbed off. Pick them up with your hands once and rub them again.

The cleaned scallop cubes can be used for cold dishes, stir-frying, and hot pot. The unused ones can be frozen. It is a delicious food that can be stored, and it is also a good side dish for stir-frying.

Do scallops have eyes?

Scallops have eyes, a total of 200, which grow on the outer edge of the scallop shell like a string of beads.

Their eyes have two types of retinas, one adapted to light and the other to dark objects, such as the shadow of a nearby predator. They cannot perceive the shape and color of objects, but they can detect changes in light and motion and can sense the presence of danger.
