How to brew wheat semi-solid wine

When the wheat is cooked to 80% or 90% done, stop the fire, soak it for an hour, take it out and cool it down. When the temperature drops to about 35 degrees, add the yeast, stir it evenly, put it into the jar and seal it. The highest temperature cannot be higher than 31 degrees and the lowest temperature cannot be lower than 15 degrees. After 20 days of jar keeping, it can be taken out of the jar.

After fermentation, a double-layered vat is used to steam the fermented pulp in a pot. After distillation, the resulting liquor is wine.

How to choose the right grain for brewing

Different grains produce different flavors of wine: sorghum is fragrant, wheat is rough, glutinous rice is soft, rice is clean, and corn is sweet. Sorghum is selected as the best raw material for Chinese liquor brewing because of its high starch content and fruit structure, which is very suitable for brewing.
