Eel is a very common fish. It is slender and belongs to a kind of fish, but it has no scales. How to kill eels

As for slaughtering the eel, nail the eel head to a wooden board. If you are in the market, the fish stall owner will ask you whether you want to make eel shreds or eel tubes. The two methods are slightly different.

To stir-fry shredded eel, you need to use a knife to cut open the eel's belly. The fish stall owner usually uses a utility knife. Take out the internal organs, then remove the entire bone from top to bottom, wash it, and cut it into shreds.

When making eel tubes, the bones are usually not removed. After taking out the internal organs, the eels are washed and cut into sections.

There is a lot of slimy liquid on the surface of eels. These slimy things are actually one of the sources of the fishy smell of yellow eels, so most people will choose to scald the eels with boiling water before cooking, remove the mucus and then cook them, so that the fishy smell will be much less.

How to keep eels fresh after killing them

It is recommended to blanch as much as you want to eat, and keep the part you want to eat the next day without blanching it, because if you freeze it after blanching, the taste and texture of the eel will be greatly reduced.

Even if you want to refrigerate the slaughtered eel, it must be frozen (below 0℃), and thaw it the next day with cold water, not hot water. Do not leave it at room temperature for more than half a day, and do not blanch it before refrigerating it, just refrigerate it directly.

As a reminder, after the eel dies, a certain amount of histamine will accumulate in its body, and histamine is toxic, so it is best to kill and eat the eel immediately. Not only does it taste good, but it is also safe.

What should you pay attention to when eating eel?

Because of the eel's growth environment, some eels have parasites. Remember to cook them all before eating. If they are not fully cooked, try not to eat them! Of course, you can eat them with confidence after they are fully cooked. Generally, parasites will basically die above 80 degrees and turn into protein!

Yellow eel should not be eaten with dog meat, dog blood, pumpkin, spinach, and red dates. Eating it with spinach can easily cause diarrhea, and eating it with dog meat can easily cause recurrence of old diseases and get angry, so try to avoid it!
