It is a concrete manifestation of the deterioration of mycelium growth conditions and the aging and death of the fungus.

The spawn and cultivation bags that "spit out yellow water" are soft, contain a lot of moisture, do not form lumps, have few or unclear mycelium, and have no spawn aroma. For the mild symptom of "spitting yellow water" fungus, its mycelium can still grow when the temperature drops, but the fungus development after cultivation is not ideal, the mushrooms are produced late and the yield is low. The main control measures: compost fermentation must not be over-rotted, especially when using straw as the substrate, the water content in the material must not be too high; when using wheat grains as the substrate, pay more attention to the production season of the strain to avoid the strain age being too long; during the strain cultivation period, prevent the influence of long-term high temperature, and take cooling measures for the summer strains.

However, sometimes there are some illusions. Some varieties secrete more yellow pigment and "release yellow water", which makes them look like they are spitting out yellow water, but this is actually a normal phenomenon. During the post-ripening culture period of shiitake mushrooms, Agrocybe edodes, and Agaricus sutchuenensis, the bags often release yellow water due to the metabolism and maturation of the mycelium, indicating that the mycelium has switched from the vegetative growth stage to the reproductive growth stage. At this time, it has the ability to produce mushrooms. Given certain environmental stimuli such as light, temperature difference, and humidity, after a few days, when a large number of primordia are produced in the bags, the post-ripening culture is over and the bags can be opened to produce mushrooms. When this kind of "yellow water release" occurs, small holes should be punctured in time to allow the yellow water to spit out in time. When releasing the yellow water, the holes should not injure the primordium to prevent the mycelium from being injured and difficult to recover, causing mycelium autolysis.
