Why do some people get sick after eating shiitake mushrooms, which are such a common ingredient?

****The pathogenesis of shiitake mushroom dermatitis is not yet fully understood. Some scholars believe that it may be a small number of people with special constitutions who are allergic to shiitake polysaccharides in the cell walls of shiitake mushrooms.
Lentinan polysaccharides are not heat-resistant and can be inactivated by cooking at 100°C for half an hour or at 135°C-150°C. However, some susceptible people may develop a characteristic rash after eating raw or undercooked shiitake mushrooms.

In other words, shiitake mushrooms must be fully cooked before eating.

Will you only get whiplash dermatitis if you eat shiitake mushrooms?

Not only shiitake mushrooms, but some anti-tumor drugs (such as bleomycin and docetaxel) can also cause whiplash dermatitis.
