The story of the six bakery brothers!

The story of the six bakery brothers!

With the gradual integration of Western diet, bread has become one of the most common foods in our lives. In various supermarkets, there are countless types of bread on the shelves, making it difficult to make a choice at once.

How should we choose from the wide variety of products on the market? Which breads can bring us nutrition and health?

Although there are many varieties of bread on the market, according to the provisions of my country's national standard "GB/T 20981-2021 General Rules for Bread Quality", bread is divided into the following six categories:

1. Soft bread

2. Hard bread

3. Puff pastry

4. Tempering bread

5. Other breads

6. Rusk products

These six types of bread each have their own nutritional characteristics. Let’s take a look at them together.

Bread with soft texture and uniform pores.

This type of bread is very popular among people because it is soft from the outside to the inside. It is a very common type of bread and can be eaten as a staple food - hamburgers generally use this soft bread.

There are many recipes for soft bread, which may contain eggs or a lot of sugar, so the health value of soft bread made with different methods is not consistent.

Bread with a hard or cracked crust and a soft interior.

Hard bread is not only very hard on the outside, but also has a harder core than the soft bread that people usually eat. Russian black bread and French baguette are both representatives of hard bread, which are mainly eaten as staple food abroad.

In addition to the regular ingredients such as flour and yeast, hard bread rarely adds extra ingredients such as sugar, so if you want to buy bread as a staple food, hard bread is really a healthy choice. However, in China, due to the poor taste of this type of bread, not everyone can accept them.

A bread with clear layers and a soft texture.

Puff pastry uses oil to block the connection between flours, making the bread have clear layers and a crispy texture. A typical example is the croissant.

This kind of puff pastry with distinct layers is very popular among consumers. Most of the bread on the market is puff pastry or bread with puff pastry as the base.

However, due to the characteristics of shortening, a lot of oil is needed to achieve it. Therefore, this type of bread hides a lot of fat and is very high in energy. Long-term consumption is not a healthy choice. It seems that next time when we choose bread, we should avoid those breads with layers.

Bread that has ingredients such as butter, edible oil products, egg products, meat products, cocoa products, jam, etc. added to the surface or inside of the bread dough before or after baking.

There are many kinds of fillings added to prepared bread, but almost all of them have a certain amount of sugar added. Rather than being a staple food, this type of bread seems to be closer to desserts. If the dough for preparing prepared bread is still made of puff pastry, then it is a typical representative of high oil, high sugar and high energy, which is even more unhealthy than the puff pastry mentioned above.

Unfortunately, however, the most popular bread on the market now seems to be this kind of puff pastry with sweet fillings. What we can do is to choose less of this kind of bread.

Other breads besides the above four types of bread.

This type of bread has a wide range, but the most common ones are those with added vegetables and meat. Compared with other breads, these breads with vegetables and meat are not just staple foods, but can be regarded as a complete meal if they are properly matched. Therefore, if you want to buy a bread for breakfast, this type of bread is the right choice.

A bread product with a crispy or crunchy texture made by slicing or cutting bread into pieces and then baking or frying, with or without adding other ingredients.

For example, products such as rusks and fried bread sticks. From a nutritional point of view, this kind of bread is very unhealthy, because data shows that bread has many holes and absorbs 80% of oil after frying, which is much higher than all kinds of food. Therefore, fried bread slices are equivalent to an oil pimple, and eating fried bread is equivalent to drinking oil!
