1. Fungus Food

When talking about fungi, the first thing that comes to mind is mushrooms. After high-temperature cooking, mushrooms will produce a large amount of nitrates, especially seafood mushrooms, king oyster mushrooms and shiitake mushrooms. The nitrite content will continue to increase during the low-temperature storage and reheating process in the refrigerator. Frequently eating mushrooms that have been heated for the second time may cause abdominal pain, diarrhea and other symptoms. Eating them like this for a long time will increase the probability of digestive system tumors. Therefore, it is not recommended to continue eating mushrooms after reheating. Try to eat them all at once and throw away the unfinished ones.

2. Seafood

Seafood such as shrimp, crabs, and clams are not suitable for reheating. If uneaten seafood is left for too long, it is easy to breed bacteria and produce toxins. The usual heating time and temperature are difficult to kill and eliminate these bacterial toxins, increasing the liver's detoxification burden. It is best to cook and eat them immediately.

3. Spinach

Spinach has a high oxalic acid content and needs to be blanched before eating. In addition, spinach also contains a large amount of nitrate. If it is heated again, the spinach will be converted into nitrite due to the heat, which is harmful to the human body.

4. Milk

Milk cannot be heated repeatedly. Over time, the milk will go bad, breeding bacteria and causing diarrhea. In addition, repeated heating of milk will denature the protein in the milk, leading to nutritional deficiencies. The boxed and bagged milk sold on the market are sterilized or sterilized and can be drunk directly or heated. It does not need to be boiled thoroughly, and it should not be heated repeatedly.

5. Tremella Soup

Because Tremella contains more nitrates, if the cooked Tremella soup is left for too long, the nitrates will decompose and return to nitrites. Nitrite will make the hemoglobin in the blood lose its ability to carry oxygen, thereby destroying the body's normal hematopoietic function and affecting health. Therefore, Tremella soup is best made and drunk immediately, and not left overnight.

6. Soft-boiled eggs

Soft-boiled eggs mainly refer to eggs that are not cooked thoroughly. Cooking eggs in this way cannot completely kill the salmonella in the eggs. If left overnight, the chances of bacteria multiplying and producing toxins increase. Even if they are cooked for the second time, there is still a risk of illness, so it is best to avoid eating them.

Eating soft-boiled eggs occasionally in small amounts may not cause significant harm to human health. However, if you eat too much or too often, it may cause gastroenteritis, abdominal pain, diarrhea, nausea and other symptoms, and in severe cases, food poisoning may occur.

It is best to eat fully cooked eggs to kill all the bacteria inside. Fully cooked eggs can be stored at low temperature and in a sealed state for 48 hours without any problems.

How to properly deal with leftovers at home?

1. Be “rigorous” when dealing with leftovers

The fourth point of the "Five Keys to Food Safety" proposed by the World Health Organization, "Keeping food at a safe temperature", clearly recommends: cooked food should not be stored at room temperature for more than 2 hours, should be refrigerated in time (preferably below 5°C), should not be stored in the refrigerator for more than 3 days, and leftovers should not be reheated more than once.

2. Be smart about leftover food. It’s best to leave only meat and no vegetables.

Compared with meat products, vegetables produce more nitrite during storage, and a larger portion of nutrients (such as vitamin C) are lost. Overall, it is recommended that "if you really need to leave some leftovers, try to leave meat instead of vegetables."

In addition, it is not recommended to leave cold dishes. Cold dishes are generally not heated, which makes it easier for bacteria and other harmful substances to grow, which can induce food poisoning problems such as diarrhea and abdominal pain.

3. Storing leftovers should be “scientific”

In order to ensure the "hygiene and safety" of leftover rice and leftovers, it is recommended to avoid "unnecessary operations" on them.

The use of chopsticks and other utensils to stir leftover food should be reduced, and leftover food should be stored in safe and reliable storage boxes to ensure they are sealed.

Leftovers should be stored in the "low temperature area of ​​the refrigerator" and eaten as soon as possible to avoid the massive reproduction of bacteria and other microorganisms.
