Add filtered sugar water (50kg of white sugar and 16.5kg of water) for every 50kg of pulp juice. Pour half of the sugar water into the pot and boil it, then add the pulp and cook for 20 minutes. When the pulp is boiled to be transparent, add the remaining sugar water and continue to cook for 25 minutes to half an hour. When the jam solidifies to more than 68%, it can be canned and sealed. After sterilization in 100°C steam or boiling water for 5 to 20 minutes, it can be refrigerated. The pulp is orange-yellow, transparent and shiny, the slurry is uniform, there is no sugar crystals and fruit stalks and other debris, and the jam with sea buckthorn fragrance is qualified.

Sea buckthorn vinegar

Wash 15kg of fresh sea buckthorn fruit and pour it into a vat, add 22.5kg of Daqu and stir evenly, ferment at room temperature of 20°C for 15 days, then add 175kg of bran into the fermented fruit, crush it with a grinder and stir evenly, and carry out the second fermentation. The fermentation temperature should not exceed 40°C. In order to avoid excessive temperature, the vat can be turned over once a day. After about ten days of fermentation, pour it into the vinegar vat for promotion, soak the vinegar residue after the first vinegar for another 10 hours, and carry out the second vinegar pouring. The finished sea buckthorn vinegar is brown-yellow, slightly turbid, fragrant, and tastes sour and bitter.
