How to choose bamboo for bamboo tube rice dumplings

Choose bamboo sections (new bamboos should be one year old, don't consider those older than two years, as new bamboos are more hydrated and more resistant to burning, and the glutinous rice cooked in them is more fragrant). The length should not exceed 25 cm and the diameter should be about 6 cm. Leave 5 cm at both ends and saw them into single sections, then drill a small hole at one end. (The length should not exceed 25 cm because the heating area is taken into consideration, and the 5 cm at both ends is for easy loading of rice, so that there is enough heating area in the middle when burning the bamboo tube. The size of the small hole depends on your patience in loading rice, and can be large or small. A bamboo tube with a length of 25 cm, a diameter of 6 cm, and a small hole of 1 cm takes about 5 minutes to load rice. After loading the rice, it is best to plug the hole with an apple or something. A large hole means poor sealing, and a hole as big as a one-yuan coin is also acceptable.
