How to make peanut pig's trotter soup

1. Prepare the pig's trotters first, remove the black hoof in front of the trotters, and then soak the trotters in ice water. 4. Add water to another soup pot, put the pig's trotters and the above ingredients into the soup pot, then add three slices of old ginger and three green onion segments. Bring to a boil over high heat, then add a spoonful of cooking wine and salt to taste. Turn to low heat and cook for another 40 minutes. Add a little pepper to taste before serving, and garnish with chopped coriander.

Note: Do not use an iron pot to cook soup as it will turn the soup black. It is best to use a casserole. In addition, the longer the soup is cooked, the better. Depending on the ingredients being cooked, the nutrients are best preserved after about 30 minutes to 2 hours.

How to make peanut pig's trotter soup

(1) To remove the fishy smell from pig’s trotters, add water and soak them in vinegar and cooking wine. This will fully soak out the blood and neutralize the fishy smell, achieving the purpose of removing the fishy smell.

(2) Marinate the pig’s trotters with flour to remove the fishy smell and dirt more thoroughly.

(4) Do not fry the pig's trotters too much, just wet the pan. Too much oil will easily fill the pig's trotters, making it difficult for the lard to penetrate and the taste will not be strong.

(5) Use hot water, not cold water, when stewing. If the pig's trotters are too cold, the meat will tighten, making it difficult for fat and protein to seep out, and you won't be able to make a milky and fragrant pig's trotter soup.

(6) While stewing, do not stir or add water.
