1. Tomato, bean sprout and beef soup

Ingredients: 200 grams each of bean sprouts, tomatoes, and beef, 2 slices of ginger.

Method: Wash the bean sprouts, drain the water, stir-fry in a pan (without adding oil), and set aside. Wash the beef, drain, cut into thin slices, add seasoning A and marinate for 5 minutes. Wash and cut tomatoes into pieces. Heat the pan, add a little oil, sauté the ginger slices, add the tomatoes and stir-fry briefly, add water, after boiling, add the bean sprouts, boil for 20 minutes, add the beef slices and cook until done, then season with salt.

2. Bamboo shoots, black beans and carp soup

Ingredients: 1 fresh bamboo shoot, 60 grams of black-eyed peas, 2 red dates, 1 carp, 100 grams of lean pork, and 3 slices of ginger.

Preparation: Peel the bamboo shoots, wash them, cut them into thin slices horizontally, and blanch them; kill and clean the carp, fry them over low heat until they turn slightly yellow, and splash in a little water; wash the rest of the ingredients, and remove the pits from the red dates. Put them together with ginger into a clay pot, add 2500 ml (10 bowls) of water, boil over high heat, then simmer for 1.5 hours on low heat, then add salt.

3. Pepper pork belly soup

Ingredients: pork tripe, ginkgo nuts, pepper, wolfberry, wine, salt, and chicken essence.

Method: To process the pig's stomach: sprinkle salt on it, rub it carefully with your hands to remove the stickiness, wash it and process it again with the same method. Put the processed pig stomach into a pot of cold water, boil out the blood foam, then take it out and rinse it with warm water, and scrape off the white greasy layer on the pig stomach with a knife. Cut the pork tripe into wide strips for later use; blanch the ginkgo nuts in water for one minute in advance, then remove them and peel off the brown inner membrane. Add all ingredients into the pot and cook for 2 hours.

4. Astragalus Pork Tripe Soup

Ingredients: Amomum villosum, pork tripe, and Astragalus.

Method: Wash all the ingredients, then put them into the pot and stew them together until the pork belly becomes soft, then add a small amount of salt to season and it is ready to eat.

5. Chinese yam, white atractylodes and lamb tripe soup

Ingredients: 50 grams of yam, 15 grams of Atractylodes macrocephala, 12 grams of chicken gizzard lining, 12 red dates, 600 grams of lamb tripe, and 3 slices of ginger.

Preparation method: Wash all the herbs, soak the red dates for a while and remove the core; wash the sheep's stomach (or ask the market seller to clean it) and boil it in boiling water for a while, pick it up, scrape off the membrane with a knife, then wash it with salt, cut it into pieces, and then put it into a clay pot together with the ginger, add 3000 ml of water (about 12 bowls of water), boil it over high heat, then change to low heat and simmer for about 2 and a half hours, add appropriate amount of salt and cooking oil.

6. Seaweed Pumpkin Soup

Ingredients: 100 grams of old pumpkin, 10 grams of seaweed, 20 grams of dried shrimps, 1 egg, and appropriate amounts of soy sauce, lard, rice wine, vinegar, MSG, and sesame oil.

Preparation method: First soak the seaweed in water, wash it, beat the eggs in a bowl and mix well, soak the dried shrimp in rice wine, peel and remove the pumpkin, wash and cut into pieces; then put the pot on the fire, pour in lard, after heating, add soy sauce to the pot, add appropriate amount of water, put in the dried shrimp and pumpkin pieces, cook for about 30 minutes, then add the seaweed, after 10 minutes, pour the beaten egg liquid into the pot, add seasoning and mix well. This soup has the effect of protecting the liver, nourishing the kidneys and strengthening the body.
