My brief history of evolution - Cooking oil in its own words

My brief history of evolution - Cooking oil in its own words

The New Year is approaching, and delicious food is indispensable for the New Year, and most of the delicious food is inseparable from me. Fat, protein, carbohydrates, heat energy, vitamins, inorganic salts, dietary fiber, and water together constitute the eight nutrients needed by the human body. Oils and fats are popular because of their special aroma.

Fat in a broad sense refers to lipids, including neutral fats and lipids. Lipids include phospholipids and sterols.

Lipids are components of the human body. Lipids are necessary for the growth and development of infants and young children. They exist in cell membranes, brain and nerve tissues. Steroids can synthesize steroid hormones.

Neutral fat can provide heat energy, form tissue fat and reserve fat, and can also promote the absorption of fat-soluble vitamins, increase the deliciousness of food, stimulate appetite, and increase satiety.

Fats are composed of glycerol and fatty acids. Fatty acids are divided into saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids. Among polyunsaturated fatty acids, linoleic acid and α-linolenic acid cannot be synthesized in the human body and must be supplied by food. They are called essential fatty acids. Essential fatty acids participate in the synthesis of phospholipids and are components of mitochondria and biological membranes. They can combine with cholesterol to form cholesterol esters, allowing them to be transported and metabolized in the body. They are also components for the synthesis of prostaglandins.

Both a deficiency and excess of essential fatty acids can be detrimental to health.

Animal fats contain more saturated fatty acids, except for some fish. Vegetable oils contain more polyunsaturated fatty acids, except for coconut oil.

People like me very much because of my body odor. My big family members all eat the same thing, regardless of whether they eat animal fat or vegetable fat.

At first, people knew me mainly through the animal fats among large family members and some plant oils, such as cottonseed oil, rapeseed oil, soybean oil, peanut oil, corn oil, rice bran oil, sunflower seed oil, sesame oil, etc., which became version 1.0. Later, it was discovered that some plant oils with good "interpersonal relationships", such as olive oil, walnut oil, linseed oil, tea seed oil, peony seed oil, perilla seed oil, hemp seed oil, etc., were upgraded to version 2.0.

What are the good qualities of some large family members who get along well with others?

Some members of the big family who get along well with others have common characteristics. They are rich in unsaturated fatty acids (linoleic acid, linolenic acid), fat-soluble vitamins, trace elements, antioxidants, etc., and have the effects of moisturizing the intestines and promoting bowel movements, beautifying and skin care, etc. They avoid excessive intake of saturated fatty acids, unbalanced intake of polyunsaturated fatty acids (excessive intake of ω-6 fatty acids, serious lack of ω-3 fatty acids), and insufficient intake of monounsaturated fatty acids. They are fragrant and delicious.

In addition to the common characteristics mentioned above, each member also has some small personality.

Olive oil. Rich in monounsaturated fatty acid oleic acid and ω-3 fatty acids. Protects the cardiovascular system.

Walnut oil. Rich in protein, fat, phospholipids, carbohydrates, calcium, phosphorus, iron, zinc, copper, magnesium, potassium, manganese, carotene, vitamins B1, B2, B6, E, folic acid, riboflavin, dietary fiber. Very low in saturated fat. Warming and nourishing the lungs and kidneys, calming asthma and moistening the intestines, darkening hair and moisturizing the skin, strengthening the body, lowering cholesterol, preventing arteriosclerosis, replenishing qi and nourishing blood, enhancing cell vitality, improving brain nerve function, anti-oxidation and anti-aging. Saturated fatty acids and unsaturated fatty acids account for 92.2% and linolenic acid 7.8% respectively.

Flaxseed oil. The α-linolenic acid content is as high as over 50%. It can lower blood lipids, soften blood vessels, and improve brain function.

Tea seed oil. The Ministry of Health of the People's Republic of China officially approved tea seed oil as a new food raw material in Announcement No. 18 of 2009. Tea seed oil ≠ tea seed oil. Rich in tea polyphenols, phytosterols, carotene, squalene, vitamins A, B, E, unsaturated fatty acids linoleic acid, iron, zinc, magnesium, calcium, etc., and does not contain erucic acid. The fatty acid content is most in line with the requirements of the fatty acid ratio required by the human body, lowering blood pressure, blood lipids, and cholesterol, preventing cardiovascular and cerebrovascular diseases, resisting arteriosclerosis, anti-oxidation, anti-aging, and anti-radiation, warming and replenishing qi and blood, increasing breast milk during pregnancy, aiding digestion, preventing gallstones, enhancing immune function, preventing cancer, prolonging life, strengthening metabolism, promoting bone development, etc., improving eyesight, blackening hair, removing dandruff and relieving itching, clearing away heat and detoxification, losing weight, sterilizing and anti-inflammatory, removing fishy smell and deodorizing, and preventing and controlling diabetes.

Peony seed oil. Peony seed oil is a woody nut oil unique to my country, extracted from the seeds of the oil-bearing peony. The Ministry of Health approved Acer truncatum seed oil and Peony seed oil as new resource foods (No. 9, 2011) as new resource foods. Peony seed oil contains 92% unsaturated fatty acids, of which α-linolenic acid accounts for 42%. It can lower blood lipids, refresh the mind, and lower blood pressure.

Perilla seed oil. Perilla seeds have been included in the list of 87 items that are both food and medicine by the former Ministry of Health of the People's Republic of China. It is rich in calcium, iron, volatile oil, vitamin A, arginine, glucosides, perilla aldehyde, terpene perilla aldehyde, eugenol, α-linolenic acid content is as high as more than 80%, the total amount of unsaturated fatty acids is more than 98%, and contains vitamins B2 and C. It can release heat, dispel cold, regulate qi, and nourish the body. It can also be used as an antiseptic, inhibit the growth of staphylococci, and lower cholesterol.

Hemp seed oil. Hemp seed oil is made by squeezing out oil from hemp seeds and consuming it as cooking oil. Hemp seeds have been included in the list of 87 items that are both food and medicine by the former Ministry of Health of the People's Republic of China. Hemp seeds are one of the "three treasures" of Bama and are famous both at home and abroad.

Hemp, also known as Chinese hemp, is an annual herbaceous crop belonging to the mulberry family and growing in rocky mountainous areas. Farmers sow hemp seeds in the cracks of rocks or corn fields in the mountains, weeding once or twice in between, sowing in spring and harvesting in autumn, and the seeds are shaped like pepper. Bama people grow hemp without fertilizers and pesticides. It is in a wild state and is a pure, original, natural, green food. It is also a healthy food that Bama longevity people have eaten for a long time. In places where hemp seeds are eaten, the proportion of centenarians and long-lived elderly people is also relatively high. There is a folk saying: "Guizhou has gastrodia elata, Guangxi has hemp." Gastrodia elata is best used as medicine, while hemp is best used as a dish. Bama hemp itself has characteristics different from hemp varieties in other parts of my country. According to research, nearly two-thirds of hemp protein is hemp-specific globulin, which is similar to human protein, easily absorbed by the human body, and beneficial to the human body; another one-third is albumin, which is similar to egg white protein.

Going back to the origin, 6,500 years ago, China had already planted hemp in large quantities. The Book of Changes called hemp "heavenly wood". For a long period of history, hemp was mainly used as an industrial raw material and was widely planted around the world. Some people believe that hemp originated in China or other Central Asian countries. So how long is the history of Bama hemp? The Bama County Annals only generally said that "it has a long history of planting, and only more than 2,000 acres were planted in 1946". In the 1980s, Bama hemp began to expand.

From ancient times to the present, the Bama people have inherited the traditional habit of eating hemp seed oil. The mountain people do not know the medicinal and dietary effects of hemp seed oil, but they think that it tastes fragrant and delicious and is easy to digest. In the era of meat and oil shortage, it was generally consumed only as an oil to supplement the nutritional needs of the human body.

Hemp seeds are the primary product of hemp. Bama people currently use hemp seeds to directly process them into a series of hemp recipes and cookbooks such as hemp seed soup, hemp seed porridge, hemp seed dishes, as well as hemp seed oil, hemp seed health products, hemp seed tea, hemp seed beverages, etc.

Hemp is the oldest and most precious traditional oil crop in Bama, and hemp seed oil is the traditional edible vegetable oil for the people in Dashi Mountain Area. Residents in the longevity area of Bama generally eat vegetable oil. Hemp seed, sesame, and soybean oil are used as daily edible oils, with hemp seed oil being the main one. Vegetable oil is basically used for cooking, accompanied by a small amount of animal oil and lard. Most of the elderly in Bama are vegetarians, and only eat meat during festivals, weddings, or funerals. Hemp seed oil, a specialty of Bama, is the main edible oil for long-lived elderly people. Long-lived elderly people consume about 40 kilograms of hemp seed per year on average.

Hemp seed contains about 26% fat. Hemp seed oil has high levels of linoleic acid and α-linolenic acid, and is the only vegetable oil in the world that can be dissolved in water. Hemp seed oil is rich in linoleic acid, linolenic acid, protein, lecithin, calcium, iron, etc. Regular consumption of this special oil can lower blood pressure and cholesterol, prevent "4 high" diseases, namely high blood pressure, high blood lipids, high cholesterol, and high blood sugar, prevent arteriosclerosis, coronary heart disease, gastrointestinal diseases, etc., aid digestion, improve heart reserve, improve eyesight and protect the liver, nourish and replenish deficiency, eliminate diseases and prolong life. It is most suitable for consumption in the late stage of fever, or weak constitution, as well as constipation or habitual constipation in the elderly, pregnant women, and parturients.

People with good character have many friends, and people with good oil quality want

I have so many brothers and sisters, especially hemp seed oil, peony seed oil and other family members with good "interpersonal relationships". Although some family members are not popular, they also have their advantages, so we should treat them objectively.

Knowing the temper of each family member, don't provoke it in the following situations.

We are all family, and every family member has common tempers, such as diarrhea, obesity, and induced cholecystitis or pancreatitis.

In addition to the common characteristics mentioned above, each member also has some small personalities, so be careful and stay away from them.

Peanut oil: cold and dampness stagnation, diabetes. Sunflower oil: linoleic acid content is about 70%, liver disease. Walnut oil: hyperlipidemia, gout and other diseases. Flaxseed oil: breast cancer patients, pregnant women, minors. Peony seed oil: allergic people. Perilla seed oil: low platelet count or coagulation disorder, bleeding tendency, hemophilia, spleen and stomach deficiency, wind-heat cold. Hemp seed oil: loose stools, spermatorrhea, impotence.
