The difference between oil chestnuts and vegetable chestnuts is that their main uses are different. Oil chestnuts, also known as "oil chestnuts", refer to chestnuts that are mainly used for direct frying, while vegetable chestnuts, also known as "raw chestnuts", are generally used more for cooking dishes and oil extraction. At present, the price of oil chestnuts on the market is higher than that of vegetable chestnuts.

How to keep chestnuts fresh

Although chestnuts are nuts, they are also called "fresh fruits" among nuts. Because they are rich in nutrients and high in water content, they have strong vitality. They are afraid of freezing, heat, dryness and water during preservation. Therefore, chestnuts can be preserved by refrigeration. Fresh chestnuts can be sealed in plastic wrap or a plastic bag and stored in the refrigerator to effectively extend the shelf life.

The sand storage method is often used in chestnut producing areas. That is, after the chestnuts are picked and temporarily gathered, they are immediately mixed with wet sand (chestnut: sand ratio is 1:2) and then stored in a mat shed and buried, commonly known as "fake burial" (sand storage).

If chestnuts are not properly stored, they are very likely to lose water, sprout, rot and deteriorate. Generally, during the storage process, when the storage temperature exceeds 20°C, cooling measures such as stacking and bagging should be taken immediately.

How to make chestnut roast chicken

Heat oil in a pan, add chestnuts and stir-fry until the surface changes color, remove and set aside, add chopped green onions and ginger, stir-fry with base oil until fragrant, then pour in chicken pieces and stir-fry until the surface is slightly yellow. Then add appropriate amount of cooking wine, soy sauce, salt, sugar and fried chestnuts in turn, pour in boiling water and cook over high heat until the juice is dry, sprinkle with green onions, and the delicious chestnut roast chicken is ready.

Prepare ingredients: chestnuts, chicken legs, salad oil, salt, soy sauce, ginger, cooking wine, green onions, and sugar.

1. Boil the chestnuts in boiling water for 4 minutes, remove the shells and drain the water. Wash the chicken legs and chop them into pieces. Slice the ginger and cut the green onions into sections.

2. Heat oil in a pan, add chestnuts when the oil is hot and stir-fry until the surface changes color, then remove from the pan and set aside.

3. Add the chopped onion and ginger, stir-fry with base oil until fragrant, then pour in the chicken pieces and stir-fry until the surface is slightly yellow.

4. Add appropriate amount of cooking wine, soy sauce, salt, sugar and fried chestnuts in turn, then pour in boiling water, bring to a boil over high heat, then simmer over low heat with the cover on for 20 minutes.

5. Turn to high heat to reduce the soup, sprinkle with scallion slices and serve. A delicious chestnut roast chicken is ready.
