Many roadside sellers say that it is wild honey, but in fact it is not necessarily authentic, because not all farmers in the countryside raise wild bees. So how to identify the authenticity of wild honey?

What is honey?

Soil honey must be obtained in the most primitive way. The honey collected by bees can be self-sufficient without artificial feeding. When collecting honey, the original pressing method should be used to remove the entire honeycomb. Beeswax and bee pollen will be squeezed out, so that the honey generally contains "impurities", with a higher concentration and in a semi-solid or solid state.

Generally speaking, wild honey has the following characteristics:

1. It has not been artificially fed, does not contain sucrose or white sugar, has a natural floral aroma, pure taste, soft and delicate texture, refreshing and soft, and a slightly spicy feeling in the throat.

2. The wild honey is extracted by a brutal squeezing method, which makes the honey higher in concentration and thicker. It is usually in a semi-solid or solid state, contains impurities, and the impurities are uneven, and the honey crystals are softer.

3. Wild honey is generally only harvested once a year. The color of the honey is relatively darker and it contains a variety of floral scents.

How to identify real honey

1. Take a drop of honey and drop it on the paper. The color of native honey is crystal clear, and it is in a hemispherical shape, which is not easy to spread and soak the paper. However, other honey or fake honey is easy to spread and soon there will be water stains that soak the paper.

2. Take a little honey and drop it into the water. Raw honey will easily sink to the bottom of the water and is not easy to dissolve. Stir it with chopsticks. There will be various irregular impurities in the water, while other honey or fake honey will dissolve quickly, and some impurities will be more evenly distributed.

3. Take a chopstick and insert it into the honey to take it out. Earth honey flows slowly and is very sticky, so it can be pulled into long threads, which can shrink into honey balls after being broken. Other honey or fake honey is the opposite. Even if it can be pulled into long threads, the broken threads are not elastic and will not shrink into honey beads.

4. If you taste it carefully, you will find that the local honey has a natural floral fragrance, is soft in the mouth, has no sandy feeling, no hard objects, and is slightly sour and slightly spicy in the throat.

Note: The slightly spicy feeling in the throat is very easy to feel, a bit like being stung by a bee, tingling. This tasting method is difficult for inexperienced people to do. I remember when I was a child, I ate too much wild honey, which made me feel uncomfortable inside as if I was stung by many bees.

What kind of honey is collected by bees?

Wild honey is produced by a kind of bee unique to my country called Chinese honey bee, abbreviated as Chinese honey. Because the bees of this species are small, flexible, and hardworking, they like sporadic nectar sources, are cold-resistant, and have strong adaptability. They can choose nests in high mountain forests and rock crevices and survive and grow naturally. The honey produced by these bees is also called native honey!

There is also a kind of Italian bee, referred to as the Italian bee. Because of its large size, strong collecting ability and high yield, it is the most commonly used bee by beekeepers. The honey it produces is called Italian honey.
