Treatment

Coffee beans processed by the sun drying method are more popular among experienced coffee lovers because they have a longer fermentation time and more flavors. In addition, coffee beans processed by the sun drying method have a higher defect rate and are more likely to have off-flavors.

How to make delicious hand-brewed coffee

Hand-brewed coffee is a type of black coffee, similar to American coffee. It uses filter paper to filter out the oil in the coffee, and the taste is more refreshing than American coffee. It can also choose beans with different flavors and roasting degrees according to personal taste. Few utensils are needed, a cone filter cup, a cloud pot, a hand-brewed pot, filter paper and a thermometer.

Four important parameters of hand brewed coffee:

1. The ratio of water to coffee powder is 1:14;

2. The quality of water is very important. It must be clean and free of impurities, and the water temperature should be between 90-96 degrees;

3. Grinding degree: the coffee powder should not be too coarse or too fine. If you go to a coffee shop to buy coffee beans, tell the clerk that you want hand-brewed coffee, and they will help you grind it directly;

4. Freshness. There is an optimal usage time for opened coffee beans. Generally, it is best to use them up within 7 days, otherwise it will affect the flavor of the coffee and it will not be so fragrant!

The production process is divided into three steps:

1. Fold the filter paper along the edge of the filter paper, fold it front and back, so that it fits the filter cup, then use hot water to wet the filter paper and preheat it so that it fits the filter cup completely.

2. Pour an appropriate amount of ground coffee powder into the filter paper, shake it to flatten the surface of the coffee powder, then take an appropriate amount of hot water, slowly and evenly pour water from the center of the coffee powder, and slowly circle from the middle to the edge until all the coffee powder is wet, then hold on to steaming for 5 seconds. Steaming extraction is the most serious step in the entire hand-brewed coffee, which directly determines the taste of the coffee. Insufficient steaming will result in insufficient coffee extraction and a light and watery taste. Steaming for too long will result in excessive coffee extraction and a bitter and spicy taste!

3. Then continue to pour water from the center, the water flow can be slightly from slow to fast, so that the coffee liquid level rises steadily, until all the water is poured out. Then wait quietly for the coffee to drip and slowly shake the cloud pot to make the coffee flavor more uniform!

When is the best time to drink coffee?

Morning
