Main ingredients: Pasta

Ingredients: shredded green onion, ginger, tomatoes, shredded pork, shrimp, eggs

Seasoning: salt, sugar, cooking wine, first-class fresh soy sauce

After mixing the pasta with oil, steam it in a steamer for 5-10 minutes after the steam starts to rise. Steam until the noodles change color and there is no hard core, then take them out and shake them loose.

Add oil to the pan and sauté shredded scallions and ginger, add shredded pork and stir-fry until it changes color, add cooking wine and fresh soy sauce to bring out the aroma. Add diced tomatoes and stir-fry until the juice comes out, then add a fried egg.

Put the steamed noodles into the pot, stir-fry over high heat, add a spoonful of soup, and add the blanched vegetables. Cover the pot and simmer for a while to let the noodles absorb the soup. Add shrimps, and then season with salt and sugar.

Tips for making fried noodles

1. For fried noodles, chewy noodles are generally chosen. Such noodles have a better taste and are easy to absorb soup.

2. When steaming noodles, make sure to steam them over high heat. If the heat is not high enough, the noodles will easily become a lump.
