(1) If you brew the lotus root starch directly with boiling water, the lotus root starch will be in lumps. You need to mix it with cold water first and then pour it into boiling water to brew it. Remember this.

(2) When mixing the cold water and then pouring in the boiling water, pour the boiling water into the bowl quickly all at once and then stir immediately. If the boiling water is poured in too slowly or the stirring is not timely, small lumps will be produced.

Problem 3: White lumps

2. Pour in a small amount of cold water and mix thoroughly to form a very thick juice.

3. Heat the water until it boils and steam appears. This is 100℃ boiling water.

4. Quickly pour 180ml of boiling water into the bowl at once, then stir immediately until it becomes a transparent paste.

Tips:

1. You must use boiling water at 100°C. The hot water in the water dispenser and thermos is not hot enough.

2. It’s cold in winter, so you need to heat the bowl before making the tea.

3. If you only have a water dispenser, you can use the hot water at about 80°C from the water dispenser instead of boiling water. Finally, put it in the microwave and heat it on high heat for 1 minute.
