Can sesame oil be used for cooking?

Sesame oil has so many nutritional values and functions. Pay attention to the following two points during use:

1. When cooking, do not add too much sesame oil, so as not to hinder digestion and absorption and promote excessive secretion of bile and pancreatic juice, which can easily induce cholecystitis and pancreatitis. In addition, avoid covering up the taste of other dishes.

2. Do not heat the oil pan too high when cooking, and do not heat sesame oil repeatedly at high temperature to prevent the destruction of provitamin A and vitamin E in the oil, and the production of high-viscosity asphalt-like substances including polycyclic aromatic substances - 3,4-benzopyrene.

Although sesame oil can be used for cooking, the nutritional components will be easily destroyed as the cooking temperature is difficult to control. Therefore, sesame oil is most suitable for making cold dishes, soups, stuffing and for flavored snacks.

How is sesame oil made

1. First, wash the sesame seeds in a large and spacious pot of water to prevent them from containing sand and earthiness.

2. Then put the sesame seeds that have been drained of water into a rotating wok, and the fuel is usually coal. Fry the sesame seeds for about 40 minutes on high heat and then on low heat, and it will be ready. If you are frying sesame paste, it will take about 30 minutes.

3. After frying, you have to make the sesame oil smoke as soon as possible. This step is very important. The fragrance of sesame oil is the first technical level. If it smokes, the sesame oil will not be so fragrant, and the color will be black and red. This step can also filter out the inferior sesame seeds, leaving only the full sesame seeds to produce oil.

4. Put sesame seeds on the stone mill to grind into paste, and pour the ground paste into a large pot on the oil-pressing machine to "splash the sauce". This is a special term for sesame oil. It means pouring boiling water into the pot with sesame oil paste and stirring it. This step also requires technical content. Although the amount of water does not need to be weighed, one cup more or one cup less of water will result in less oil.

5. Finally, put the poured sesame oil in a tin barrel to settle. After three to five days, it can be bottled and sold.
