First, mix the flour, salt, eggs, and yeast powder evenly, then add water to knead the dough, and knead it until it is smooth. (Remember, the dough can only be kneaded, not kneaded) Then seal it with plastic wrap. Knead the sealed dough every 20 minutes until it is smooth, a total of three times. Note: The key to kneading the dough is to make it thin, the dough should be as soft as possible, and it can be shaped, the kind that sticks to your hands. The dough must be fully fermented, and it must be larger than making steamed buns, so I add a little more yeast than usual. When kneading the dough, be even, add water little by little, add it faster, and stir with chopsticks. Dip your hands in dry flour and shape the dough.

What should you pay attention to when making fried dough sticks?

Take out the dough, knead it evenly, divide it into small pieces, roll each small piece into a long sheet, cover with plastic wrap, and let it rise again for 40 minutes. Take out the risen noodles, roll them with a rolling pin until they are evenly thick and wide, cut them into strips of about 5 cm, stack two of them together, and press them vertically with chopsticks to form them. Note: The noodles should be of the same length and thickness. Do not press too hard with the chopsticks, as long as they can stick together.

How to make fried dough sticks

Pour more oil into the pan, and the oil temperature should be 180-200 degrees. You can put a small piece of dough into the pan to test it. If the dough cannot float, it means the oil temperature is low. If it floats quickly, it means the oil temperature is too high. If it floats but does not turn yellow immediately, it means the oil temperature is appropriate. Stretch your hands and put the dough into the pan, quickly stir the dough sticks, wait for the dough sticks to puff up, and then fry until both sides are golden. Note: When putting the dough into the pan, you should support it with both hands and try to stretch the dough sticks a little longer. After putting it into the pan, you should keep turning the dough sticks left and right to let it roll in the hot oil so that it can quickly expand and become larger. This is the most critical step.
