How are pistachios made?

1. Remove impurities and screen to remove the impurities remaining in the shelling process, and select flat kernels with light yellow seed coat, white kernel, full shape, uniform size and dense texture for processing.

2. Decolorization: Soak the kernels in 4% citric acid decolorizing solution (2 times the weight of the raw material) for 4 to 5 minutes, or in 0.5% to 1.0% sodium bisulfite decolorizing solution for 25 to 30 minutes.

3. After rinsing and decolorization, rinse with clean water 2 to 3 times immediately, and then soak in clean water for 5 to 10 minutes until the surface of the raw material is neutral when tested by test paper.

4. Soaking: Weigh various spices in the following formula according to the percentage of water weight, put them into water and boil for 1 hour, filter to get the fragrance liquid. Then put the same amount of raw materials into the fragrance liquid and soak for 30 minutes, remove and drain.

5. Drying: Dry at 60°C to 70°C until the moisture content is about 7%.

6. The quality of roasted pistachios has strict requirements on the baking temperature. Generally, the stage heating method is adopted, that is, heating at 100°C and 120°C for about 18 minutes respectively, and finally controlling the temperature at 130°C to 140°C, baking for 10 to 25 minutes, and then cooling rapidly.
