Nutritional value of stewed pig's trotters:

Pig's trotter, we ordinary people call it "pig's foot" or "pig's hand". Pig's trotters contain more collagen protein than ordinary food, and the fat content is lower than fat meat. Nowadays, it is very popular to supplement collagen. The human body lacks collagen. In addition to preventing and delaying aging, it can also supplement the trace elements and nutrients needed by the body. Pig's trotters are rich in nutrients and can be cooked in a variety of ways. Pig's trotters are not only a common dish, but also a nutritious tonic.

How to make pig's trotters:

1) Pig’s trotter stewed with soybeans:

Wash the pig's trotters and chop them into pieces. I usually cut the ginger and green onions into thin strips. Wash the celery leaves and stir-fry them, but I only want the rhizomes. Preheat the oil in the pot. When the oil is hot, add the green onion, ginger strips and pig's trotters and stir-fry until they are almost cooked. Put them into the casserole, add water and soybeans into the pot, and simmer on low heat for about 60 minutes until the soup turns white. Finally, add the celery segments and sprinkle some fresh green onions and serve. Mothers cannot eat spicy foods during breastfeeding, so do not add pepper or MSG.

2) Peanut stewed pig’s trotter soup:

Clean the pig's trotters and chop them into pieces. Soak the peanut kernels in warm water. Cut the ginger into slices. Remove the stems of the mushrooms and wash them. Boil water in a pot. When the water boils, put in the pig's trotters and cook over medium heat until all the blood is gone. Remove from the pot and set aside. Take a stewing pot, add pig's trotters, peanuts, ginger, mushrooms, salt, Shaoxing wine, add appropriate amount of clear soup, cover, and stew for about 2 hours before serving.
