Tannins will cause the protein in the saliva to condense into clumps, making people feel astringent. At the same time, they will also affect the action of gastric enzymes and cause stomach discomfort. There are two main ways to remove tannins. One is that tannins are mainly found in the peel, so it will be much better to eat it without the peel; the other is to artificially ripen and remove the astringency, such as putting it together with ripe bananas.
