Every bite was salty and juicy, bringing out the aroma of pork and the flavor of the sauce to the greatest extent.

How are the nutrients in pork belly absorbed by us? This requires looking at our human digestive system. The digestive system is composed of the digestive tract and digestive glands. The bile and pancreatic juice secreted by the digestive glands also participate in the digestion process.

First stop: stomach

The gastric smooth muscle contracts and relaxes, and the chewed food is fully mixed and becomes "chyme". The lean meat part of the pork belly is mainly protein, which will be partially digested by gastric acid and pepsin with the help of gastric microbiota. We often think that the stomach digests and absorbs fat, but in fact, the main absorption position of fat is in the small intestine.

Second stop: small intestine

After leaving the stomach, the pork belly chyme enters the duodenum, jejunum and ileum. The bile secreted by the liver is released from the temporary storage in the gallbladder through the duodenal papilla into the descending duodenum, where the iron, vitamin B12 and minerals in the chyme will be absorbed in large quantities, and the fat will be broken down into glycerol and fatty acids by the lipase secreted by the pancreas, which will be absorbed into the blood and lymph by the small intestine.

Most of the nutrients will be absorbed in the small intestine, while the large intestine absorbs the water from the food residue to form feces which are then excreted from the body through the anus.

In fact, if you cook pork belly in the right way and eat it in the right way, you won't gain weight. Here, I will provide you with a correct cooking method and a correct recipe.

First of all, choosing the meat is the first step. It is best to choose pork belly with more lean meat, fresh pork belly. Sometimes the meat tastes bad not because of the wrong cooking method, but because the raw materials are not selected correctly.

Wash it with salt and flour. Then, stir-fry the pork belly without adding oil to remove the fat. If you use less oil, you can pour out the remaining oil. Finally, add ginger, dried chili peppers, star anise, bay leaves, cinnamon, soy sauce, oyster sauce and other marinade ingredients and water to marinate. Don't forget to cut it into small pieces when eating, and pour the sauce on it for a better taste.

In addition to eating less fat, we can eat pork belly with vegetables and fruits. Here I recommend a few, Chinese cabbage, spinach, tomatoes, apples, cherries, pears, grapefruit. Especially these fruits, which have less sugar content, can be consumed more.

They have low fat and protein content, and almost no chemical reaction occurs in the mouth and stomach, but the rich dietary fiber can promote small intestinal peristalsis and accelerate the excretion of metabolites, so constipation will not occur. At the same time, the vitamins and minerals in them can also regulate blood sugar and blood lipids, and reduce the adverse effects of fat on diseases such as high blood lipids and fatty liver. Remember to eat vegetables when eating meat.
