What kind of fillings need to be added with flour? What is the role of adding flour to the fillings?

We all know that many people make stuffings when cooking. There are many flavors of stuffings and the methods are also different. Some people put some flour in the stuffings, while some people do not put flour in the stuffings. So what stuffings need flour? Let's take a closer look!

What fillings need flour?

We often make white sugar or brown sugar buns, as well as various sugar cakes, etc. The fillings of these sugar fillings need to be added with flour. There are also fillings for custard buns, and flour is also needed when making custard fillings.

The benefits of adding flour to fillings

The purpose of adding flour to sugar and brown sugar fillings is to avoid burns. Sugar will melt into liquid after high temperature. Although the outside of the sugar bag or sugar cake may not be hot, the sugar filling wrapped in the dough will still flow and the temperature is not low. If you are not careful, you may be burned by the flowing liquid. However, the sugar filling with flour will become a thick paste that is difficult to flow after melting, which is safer.

There are two purposes for adding flour to the filling of custard buns. It is to prevent burns and to set the shape. Because when making custard buns, the egg yolk will become a thick paste after frying, and milk and sugar need to be added for seasoning, so that the filling will flow. If you wrap the buns directly, there will be a risk of burns, and it will be difficult to close the mouth when wrapping. Adding some flour to the filling will make it easier to use.

Especially for those who have children at home, you must add some flour when making these fillings. The flour can be raw or fried. The main purpose is to prevent burns.

What fillings don't require flour?

We also often make meat-filled buns, dumplings, pies or meatballs, etc. These meat fillings do not need to be added with flour, and adding flour will directly affect the taste of the food. Some fillings need to add some starch, and the addition of starch is for better shaping and to increase the tender and smooth taste. Like meatballs, fish balls and shrimp balls, as well as chicken meatballs, all of these need to be added with starch when making them. However, when making buns and dumplings, some people also add some starch to the fillings, and the finished fillings are often clumpy, etc. I don’t like it. I think adding water to the fillings can make the fillings tender and juicy.

How to make delicious food with flour as filling

Sugar Triangle

The ingredients needed are: flour, warm water, yeast, and brown sugar.

1. Add yeast to the flour, use warm water to make a smooth dough, cover with a lid, and place in a warm place to rise until it doubles in size.

2. Put brown sugar in a bowl, add a little flour and mix well, and set aside as filling. (The ratio of brown sugar to flour is 3:2, so the filling is moderately sweet and not sugary)

3. Knead the risen dough to release air, let it rest for ten minutes, then roll it into long strips and divide it into even-sized pieces.

4. Roll the dough into a thick middle and thin skin around the edges, put the filling in, pinch out three corners, and finally pinch it into a three-cornered sugar bag.

5. Add water to the pot, cover the steamer with a cloth, place the wrapped sugar triangles on it, cover with lid and let it rise for a second time for 10 minutes.

6. When the proofing time is up, bring to a boil over high heat, then turn to medium heat and steam for about 20 minutes before turning off the heat. Leave the lid on for another three minutes to prevent the sugar triangles from shrinking when cooled, which would affect the taste and appearance.

Tips:

1. You can use brown sugar or white sugar as the filling, but I personally think brown sugar is better and tastes sweeter.

2. Add dry flour to the filling to prevent the melted brown sugar from flowing out and burning your mouth when eating.
